11 September 2008 - Kikkoman Corporation, the world's leading soy sauce producer, has opened a new research & development laboratory at the University of Wisconsin-Madison research park. The lab will be Kikkoman's first in the US, the company's largest market outside of Japan.
Food science researchers from Kikkoman will team up with University of Wisconsin-Madison scientists to focus on the flavour, functionality and fortification of food products. Kikkoman and its University of Wisconsin-Madison research partners also will be exploring how these and other factors can provide healthier food with greater benefits to consumers.
Kikkoman opened its first plant in Walworth, Wisconsin in 1972 in order to meet the growing demand for soy sauce in the US. A second plant was opened in Folsom, California in 1998. The firm also has 10 distribution centres across the country.
