Packaged Peanut Product and Method of Production

A packaged peanut product prepared by providing fresh in-shell green peanuts, boiling the peanuts in a salted hot water bath, air cooling the peanuts after boiling to cool the peanuts to a temperature range of between 100.degree. F. to 175.degree. F., packaging the peanuts into a high gas barrier container when the peanuts are within the temperature range of 100.degree. F. to 175.degree. F., vacuum sealing the container to remove air and seal the container, submerging the container with the peanuts in a cold tap water bath until the peanuts are chilled to the temperature of the cold tap water bath, and storing the container with the peanuts in a refrigerated condition, whereby the texture and flavor of fresh green peanuts can be preserved for an extended period of time by inhibiting enzymatic activity and microbial growth in the green peanuts without artificial preservatives or extensive high temperature pasteurization and processing.

The purpose of the present invention is to provide, as fat for non-tempered chocolate, a fat composition which can contain less trans fats and more cacao materials such as cocoa butter and cocoa mass, and has good melting and snapping properties. The present invention provides fat for chocolate and chocolate which has a strong chocolate flavor and good melting and snapping properties such that health risks linked to trans fats can be avoided.

Melt Processable Starch Composition

The present invention relates to starch compositions which contain starch and additives. The starch has a weight average molecular weight ranging from about 1,000 to about 2,000,000. The additives can be plasticizers or diluents. The composition containing the starch and the additive is formed by means of passing the composition through a die to produce fibers, foams or films. These compositions have an extensional viscosity in the range from about 50 to about 20,000 pascal seconds. The starch compositions preferably contain a polymer that is substantially compatible with starch and has a weight-average molecular weight of at least 500,000.

Studies were made specifically on the blending ratio of the saccharified starch and the protein decomposition product thus separately prepared to determine a preferable blending ratio that does not cause fermentation failure in the fermentation step.

Preferably a yeast extract having a ratio of at most 3.5 between the percentage (w/w) of free amino acids and the percentage (w/w) of the total amount of 5'-GMP and 5'-IMP is used. Preferably, a yeast extract having a ratio of at most 12 between the percentage (w/w) of protein and the percentage (w/w) of the total amount of 5'-GMP and 5'-IMP is used. The invention also discloses a food with a reduced amount of fat with an improved fat note in the taste and/or in the aroma and/or in the mouthfeel.
