The invention relates to a method for producing soft cheeses in the form of capsules and can be used in the food industry, particularly the dairy industry, to obtain various types of encapsulated soft cheeses. The essence of the invention is that a mixture based on dairy whey and concentrated and/or dry milk is prepared while ensuring that the aforementioned mixture contains no less than 20.0% dry matter and no less than 20 mg% of ionic calcium (Ca2+), the resultant mixture is encapsulated in a shell-forming solution based on ionotropic polysaccharide of sodium alginate at a concentration of 0.5-5.0% to form capsules with a heat-stable polysaccharide shell, the interior contents of which are the aforementioned mixture, after which the resultant capsules are ripened in dairy whey, as a result of which a soft cheese is obtained from the mixture. The aim of the invention is to obtain soft encapsulated cheeses.
